Last Wednesday the younger kids and I took the opportunity to go to Sydney and surprise mum for her birthday. Ivy decided that she wanted to make her Granny a chocolate cake but without enough cocoa, we settled on a butter cake recipe which soon changed into a Rainbow cake after Ivy's morning of colour experimentation (more on that another day).
We make basic cakes, nothing too fancy and we are definitely not as talented as my sister who upstaged me by literally making a Rainbow shaped cake! - she is amazing!, but we always have fun at giving it a go.
After making the cake mix and dividing it into three,the kids chose what colours they wanted then added the food colouring and mixed well. "Blobbing" the mix randomly into the pan was probably the best part, and at this point I had no idea how it was going to work... we were winging it.
We kept a very close eye on the cake, we have a habit of burning things, and when it was cooked we held our breath as it came out of the pan. When it was cool they iced it in the only colour which hadn't been used, green, and we drove down to arrive on mums doorstep, just as she got home.
I'm not sure which surprised her the most, us being there, the cake or the "bouquet" of spinach that we presented her, but it either way it was an great morning spent celebrating her birthday.
